The tradition of the pig roast, or hog roast, is one that spans cultures across the world and has existed for centuries and perhaps longer in many cases. Called Lechon Asado is many hispanic cultures, the whole pig roast is associated with large celebrations where family and friends gather and participate in the cooking process. While rotisserie style roasts can take eight hours or later, roasting boxes can cut cooking times in half, producing mouth-watering results and delicious crispy skin in as little as four hours. A well cooked roasted pig's meat will literally fall of the bone. In the tradtional American pig pickin', partygoers will do just that, showing the tenderness of the delicious roasted pork. In Hawaiian Luau's a hole is dug into the ground, where the whole pig is placed to roast slowly using hot lava rocks for heat and banana leaves as an insulation. These barbecue traditions all share a common thread, they are integral parts of the cultures from which they come. And it is up to us to keep the cultural traditions from which we come alive for the next generations. Happy roasting!
