Ripoll was born in Barcelona, Spain on February 5, 1935. At 16 years of age she began taking drawing classes at the Llotja School of Arts and Crafts (Escuela de Artes y Oficios). Subsequently she attend the Superior School of Fine Arts (La Escuela Superior de Bellas Artes), where she studied al fresco techniques and figure drawing.
Ripoll completed her artistic development with courses in perspective drawing and costume design at the Theatre Institute of Barcelona (El Instituto del Teatro de Barcelona). She also dedicated several years to creating costume and fashion designs for fashion magazines. Ripoll finally decided to devote herself to oil painting, primarily with flowers and still lifes as her subject matter.

She is best known for her beautiful floral watercolors and landscapes in oil and watercolor. Nancy attended the University of Utah where she studied with master painter Robert Wood, Edward Maryon, Harrison Groutage, Doug Snow, and Richard Van Wagoner. From there, she went on to teach at the University of Utah, BYU, and the Watercolor Society.
Over her extensive career as an artist, she was awarded 1st place for her art at the Western Art Guild, Utah State Fair, and the Utah Watercolor Society.
Her work has been exhibited at the Eccles Art Center, the Western Art Guild, the SLC Art Center, the SLC Library, and Idaho State University.
Her paintings have been collected by many notable individuals and organizations, including President and Mrs. Bush, President and Mrs. Reagan, Rose Long Art Investment, Scott Anderson, President of Zions Bank, LDS Hospital, St Marks Hospital, and BYU.
